The most typical variety of the area is the olive tree Hojiblanco, although the Picual is also very extended and is more and more numerous the Arbequino and finally, not a few plots of Picudo.
This mixture of varieties, together with the characteristics of the soil, in a horizon of undulating hills allow us to obtain oils of the highest quality.
Part of the olives we mill comes from olive growers who have worked with “la Casa” for many years, however Luis del Pino manages several olive tree farms, which allow us to have full control over the quality of the olives, as we can interact with our harvesters as to the most appropriate time of the “cogida”, as well as in terms of cultivation methods and treatments.
